Fun Fall Activities

Fall is a favorite. Brisk mornings, warm days, cool evenings, and a permanent smile!  Open up the window, let in the fresh autumn air, and enjoy family, football, and flannels. It is officially time to pull out your favorite sweaters, cute boots and pumpkin spice up your life!
Here are some fun fall activities that are perfect for the family and will help you enjoy every minute of this glorious season! 

Go on a Drive

Going on a drive as a family is the perfect way to disconnect, spend time together and enjoy the brilliant fall colors as the leaves change. 

Visit a Local Pumpkin Patch

And be sure to take pictures! Stock up on a few pumpkins, hay bails, cornstocks, or any of your favorite fall decor items (all while supporting your local farmers)!

Make a Hearty Dinner for the Family

One of our very favorite traditions is “Dinner in a Pumpkin.” We eat it every year for Halloween, and it is a hearty recipe and perfect to give the kids before they head out Trick-or-Treating.

Dinner in a Pumpkin 
Ingredients: 
2 pounds of ground beef (or ground chicken)
1 cup chopped celery
1 onion, chopped
1/4 cup green onion, chopped
3 cups cooked rice
1 can Cream of Chicken soup
1 can Cream of Mushroom soup
3 tablespoons brown sugar
4 tablespoons soy sauce
Salt and pepper to taste
1 medium size pumpkin
Remove top and clean out the insides of the pumpkin. Brown hamburger (or chicken). In another pot, cook rice (white or brown) as directed on the package. Chop and saute celery, onion and green onion. Once tender, combine vegetables with hamburger, soup mixes, rice, brown sugar, soy and salt and pepper. Mix well. 
Put the mixture inside the pumpkin, and replace the lid. Place on a baking sheet and into a 400 degree oven. Bake until pumpkin is tender (1 ½ to 2 hours). Scoop out to serve, scraping sides of pumpkin in with the rice mixture. It is so good it will melt in your mouth!

Spice Up Your Life with Pumpkin Spice

You just can’t escape the season of all things pumpkin! Enjoy a Pumpkin Spice Latte, pumpkin cookies, or pumpkin bread. You can also fill your home with the scent of pumpkin spice with a candle or wall plug-in.  
While you are enjoying all things pumpkin, you MUST try these Pumpkin Bars. 
Pumpkin Spice Cake with Cream Cheese Frosting
Ingredients:
25 ounce can of pumpkin
2 cups sugar
1 cup vegetable oil
4 eggs
2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
In a mixer, beat pumpkin, sugar and oil. Add eggs one at a time, lightly beating. In a separate bowl mix all the dry ingredients. Gradually add to wet mixture and mix. Pour onto greased cookie sheet, bake at 350 for 25 to 30 minutes.
Frosting:
4 ounces cream cheese
5 tablespoons butter
1 teaspoon vanilla
2 cups powdered sugar
3-4 teaspoons milk
Chocolate candy bar or milk chocolate chips (to garnish)
Mix cream cheese, butter and vanilla until smooth. Add powdered sugar and milk. Mix well. Frost when cool.
Grate a milk chocolate candy bar on top or chop up some milk chocolate chips and sprinkle on top!

Find your nearest apple orchard and go apple picking! You can enjoy the fall weather, spend time with your family, and gather your own little harvest. Try using the fresh apples to make a homemade pie, an apple crisp or caramel apples!

Plan a Movie Marathon
